Ground beef with peppers, onion, and a modest amount of sweet potato, topped with fried eggs. Skip the sweet potato for a near-zero-carb version.
Ingredients
- 700 g ground beef
- 1 medium sweet potato (about 300 g), small dice — optional
- 1 bell pepper, diced
- 1 onion, diced
- 20 g olive or avocado oil
- 3 g smoked paprika
- 8 g sea salt
- 6 eggs
- Green onions, to finish

Method
- If using the sweet potato, start it first: sauté in the oil over medium heat 8-10 minutes until tender and browned — small dice is what makes it cook through.
- Add the onion and pepper for 3-4 minutes, then the beef, paprika, and salt; brown it well, breaking it up.
- Make six wells and crack an egg into each; cover the pan 3-4 minutes until the whites set and the yolks are still soft.
- Finish with green onions.
Notes
- One sweet potato across six plates keeps carbs modest; leave it out entirely and the hash doesn't miss it.
