Hard-seared chicken strips with charred peppers and onions and homemade fajita seasoning. Lettuce cups for the adults, tortillas for the kids.
Ingredients
- 900 g chicken thighs or breasts, cut in strips
- 3 bell peppers, sliced
- 2 onions, sliced
- 30 g avocado or olive oil
- 8 g chili powder
- 5 g ground cumin
- 3 g smoked paprika
- 2 g garlic powder
- 2 g dried oregano
- 8 g sea salt
- 2 limes (or 1 lemon)
- Butter lettuce cups, sliced avocado, and cilantro, to serve
- Tortillas, for the kids

Method
- Stir the chili powder, cumin, paprika, garlic powder, oregano, and salt together; toss the chicken with half of it.
- Get a cast-iron skillet properly hot. Sear the chicken in two batches — crowding the pan steams instead of sears — and set aside.
- Char the peppers and onions in the same pan with the rest of the seasoning, 6-8 minutes, letting them sit still long enough to blister.
- Return the chicken, squeeze the lime over, and toss.
- Serve in lettuce cups with avocado and cilantro; tortillas for the kids.
