Chicken Fajita Skillet

Hard-seared chicken strips with charred peppers and onions and homemade fajita seasoning. Lettuce cups for the adults, tortillas for the kids.

Ingredients
  • 900 g chicken thighs or breasts, cut in strips
  • 3 bell peppers, sliced
  • 2 onions, sliced
  • 30 g avocado or olive oil
  • 8 g chili powder
  • 5 g ground cumin
  • 3 g smoked paprika
  • 2 g garlic powder
  • 2 g dried oregano
  • 8 g sea salt
  • 2 limes (or 1 lemon)
  • Butter lettuce cups, sliced avocado, and cilantro, to serve
  • Tortillas, for the kids

Click an ingredient once it's in the bowl.

Method
  1. Stir the chili powder, cumin, paprika, garlic powder, oregano, and salt together; toss the chicken with half of it.
  2. Get a cast-iron skillet properly hot. Sear the chicken in two batches — crowding the pan steams instead of sears — and set aside.
  3. Char the peppers and onions in the same pan with the rest of the seasoning, 6-8 minutes, letting them sit still long enough to blister.
  4. Return the chicken, squeeze the lime over, and toss.
  5. Serve in lettuce cups with avocado and cilantro; tortillas for the kids.
