The classic: seared sirloin and fried eggs with a quick pan of sautéed zucchini.
Ingredients
- 700 g sirloin steak (or leftover steak from dinner)
- 8 eggs
- 2 zucchini, in half-moons
- 30 g olive or avocado oil
- 8 g sea salt
- Black pepper

Method
- Salt the steak and sear it in a hot skillet 3-4 minutes per side for medium-rare; rest it while everything else cooks.
- Sauté the zucchini in the steak pan with a pinch of salt until browned at the edges, 4-5 minutes.
- Fry the eggs in the oil to your liking.
- Slice the steak against the grain and serve with the eggs and zucchini.
Notes
- Leftover dinner steak, sliced and warmed in the pan for one minute, makes this a ten-minute breakfast.
